Masoor Dal with Bok Choi

Masoor Dal (Red Lentils) with Bok Choi

Ingredients:

Oil as needed

1 ½ cups of Red Lentils

1 small finely chopped onion

1 medium tomato chopped

1 clove garlic minced

1 tbsp ginger, grated

1 Bok Choi, chopped

½ Cayenne pepper, minced

Turmeric powder

Whole Cumin Seeds

Salt

Cook the Red Lentils with Tomatoes, bok choi and a pinch of turmeric (add water as needed – lentils are easy to manage).

Heat oil in a frying pan. Roast the cumin seeds, when they start sputtering add the chopped garlic. As soon as you get the fragrant smell of garlic rising add the onions. Take care so that the garlic does not burn. Saute the onions with a little sugar added until they turn a nice pink with a hint of brown. Mix the cooked lentils well with a whisk so that the lentils are all nicely mashed up. Now add it to the frying pan the freshly grated ginger. After you have cooked them for a few minutes, add water to get your desired consistency (not too thick, not too watery). Add Salt and allow the lentils to come to a rolling boil – when you are happy with the consistency you are done! Enjoy!
