Ten Minute Sesame Noodles with Bok Choi

12 ounces Asian noodles
2 tbsp sesame oil
1 bunch green onions, chopped
1 red bell pepper, chopped
1 head bok choy, chopped (or try Chinese cabbage or other favourite greens)
1 tbsp sesame seeds
1/2 cup roasted cashews, optional
1 tsp salt (optional)
In a large skillet over medium heat, warm sesame oil. Add
onions and pepper and cook for 3 minutes. Add bok choi
leaves and sesame seeds and cook an additional 3 minutes.
Meanwhile, cook noodles according to package directions.
Combine noodles and vegetables with cashews and salt, if
desired, and serve immediately. Serve with soy or teriyaki
sauce on the side.
