Disappearing Zucchini Orzo

(inspired by a recipe in Animal, Vegetable, Miracle by Barbara Kingsolver)

¾ lb package orzo pasta (or try using Quinoa, Spelt Berries, or Brown Rice for an even healthier meal) – Cook according to instructions

1 onion, chopped

Garlic, to taste, chopped finely

3 large zucchini or any summer squash

Olive oil for sautéing

Thyme

Oregano

¼ cup Parmesan or any hard cheese, grated

Use a cheese grater to shred zucchini. Sauté briefly with chopped onion and garlic until golden.

Add spices to zucchini mixture, stir thoroughly, and remove from heat. Combine with cheese and cooked orzo or other grain, salt to taste. Serve immediately or as a cool salad.
