ARTISANALE’S Braised and Marinated Beet Green Salad

1 bunch beet greens, washed and sliced into 1/2 ” strips
2 small garlic scapes, minced
2 green onions, minced
2-3 turnips or radishes or kohlrabi, sliced shredded
Extra Virgin Olive Oil (EVOO)
Salad greens of your choice
Salt and pepper to taste

According to Yasser, if you get the basics right there is no limit to the options you have open to you in this meal. Throw the beet greens into the boiling water for 5 mins. Take them out add the scapes and green onions, salt and pepper, drizzle the EVOO (as much as you like) on these ingredients. Mix the ingredients well and place in a container in the fridge overnight (or longer) stirring every so often to marinate the dish. (This is where the recipe become very flexible) prior to serving, shred your veggie of choice over top of the beet greens, add your salad of choice above that and more salt, pepper and EVOO to taste.
