Another unique way to use up your excess rhubarb:
4 Cups chopped rhubarb
4 Cups sliced onions
4 Cups brown sugar
2 Cups cider or malt vinegar
1 tsp cinnamon
1 tsp salt
1/2 tsp each- cloves, ginger, pepper
Throw everything into a pot, bring to a boil, cook 1 hour. Makes 3 X 500 ml jars. Adjust sugar to your liking. Enjoy.
